Open gardens, baking and the Jubilee!

Wow, how is it a month since the Jubilee already? 

I had a busy weekend baking for local jubilee celebrations and the Hanley Swan Open Gardens, where there was a pop up café in aid of the National Garden Scheme Charities. 

I baked some of my old favourites such as Biscoff Brownie, and Vanilla Cupcakes that I added Jubilee rice paper to some and made purple icing Jubilee stamps for the others. 

To create the purple icing Jubilee stamps I used roll out icing that I added purple food colouring to and then I rolled out the icing to about the same thickness of a pound coin and used a Jubilee stamp to imprint the pattern onto the icing. I then used a circle cutter to cut the icing into a circle disk that could be added onto the top of the cupcakes. 

These both went down well at the Open Gardens and were easy to make, which is always a bonus!
