Have you guys heard of or seen these things?
They are a cake that is made with 1 simple batter, yet bakes up in 3 different layers.
Sounds interesting right?
So I decided to give it a try with the left over pumpkin I had from my Pumpkin Martini Cupcakes
I have attempted to make a vanilla version of this cake before, and it reminds me of a flan taste/texture.
Start by buttering your baking dish, set aside.
Separate your egg whites and egg yolks. I let my eggs reach room temperature before whipping.
Whip egg whites until stiff peaks form
In separate bowl, beat egg yolks and powdered sugar
Beat together until pale and light in color.
Now comes the fun part, adding in the melted and cooled butter…
I should have used a larger bowl, but I didn’t want to wash another dish, so I worked with what I had 😛
Mix in the flour
Then the pumpkin and milk
I added the batter to my egg whites, in the larger bowl.
Gently fold in the batter until completely smooth…
Pour the batter into your baking dish
Pre-bake: I’m looking for layers… nothing yet
I checked my cake after 45 minutes and decided to bake it for an additional 10 minutes. It was too jiggly in the center for me.
Post-bake: I still don’t see layers… Maybe when I cut into it?
After cooling completely, my cake cracked. Oh well, still tastes good, right?
Slicing into it, looking for the “magic” layers…
You guys see anything?
Oh well, top it with a dusting of powdered sugar and call it a day 🙂
Serve with whipped cream topping too! It reminds me of pumpkin pie.
