Magic Cake

Have you guys heard of or  seen these things?

They are a cake that is made with 1 simple batter, yet bakes up in 3 different layers.

Sounds interesting right?

So I decided to give it a try with the left over pumpkin I had from my Pumpkin Martini Cupcakes

I have attempted to make a vanilla version of this cake before, and it reminds me of a flan taste/texture.

Pumpkin Magic Cake

Start by buttering your baking dish, set aside.

egg whites, egg yolks

Separate your egg whites and egg yolks.  I let my eggs reach room temperature before whipping.

beaten egg whites

Whip egg whites until stiff peaks form

sugar and egg yolks

In separate bowl, beat egg yolks and powdered sugar

pale and light

Beat together until pale and light in color.

melted butter

Now comes the fun part, adding in the melted and cooled butter…

I should have used a larger bowl, but I didn’t want to wash another dish, so I worked with what I had 😛

Mix in the flour

Then the pumpkin and milk

I added the batter to my egg whites, in the larger bowl.

Gently fold in the batter until completely smooth…

Pre-bake: I’m looking for layers… nothing yet

Pumpkin Magic Cake

I checked my cake after 45 minutes and decided to bake it for an additional 10 minutes.  It was too jiggly in the center for me.

Post-bake: I still don’t see layers… Maybe when I cut into it?

Pumpkin Magic Cake

After cooling completely, my cake cracked. Oh well, still tastes good, right?

Pumpkin Magic Cake

Slicing into it, looking for the “magic” layers…

You guys see anything?

Oh well, top it with a dusting of powdered sugar and call it a day 🙂

Serve with whipped cream topping too!  It reminds me of pumpkin pie.

Instructions
  1. Preheat oven to 325 degrees F. Butter an 8 x 8 cake pan. (I used a square glass Pyrex dish). Set aside. Seperate egg whites and egg yolkd into 2 seperate bowls. Whip egg whites until stiff peaks form. In seperate bowl beat egg yolks and sugar until pale and light. Mix in the melted butter and water. Add the flour, mixing to ensure there are no lumps. Beat in the milk and vanilla. Add the pumpkin and pumpkin pie spice and whisk until smooth. Slowly add the egg whites, carefully folding them until until the batter is smooth. Pour the batter into the prepared baking dish. Set the pan on a baking tray and bake for about 45-50 minutes. The top will still be a little jiggly but will set after cooling. Cool completely before slicing into squares and dust with powdered sugar.
