Pistachio Pudding Cookies

Cookies.

They are my baking go to when I need a quick fix.

Simply because, they are simple.

And these pudding cookies are foolproof!

You can adapt them to make any flavor you desire.

The first time I made them was in a chocolate chip cookie recipe.

They turn out perfect:

Chewy

Sweet

Gorgeous

I adapted the Chocolate Chip recipe for Pistachio since I had this Jell-O flavor on hand.

I didn’t have any ACTUAL pistachios on hand though, hence the almond slivers….

But if you do have pistachios, chop those babies up and throw them in the dough.  I’m sure it’s delicious.

Servings: cookies
Instructions
  1. Preheat oven to 350 degrees F. Cream butter and sugar until light and fluffy. Add pudding mix, beat well. Add in eggs and vanilla, mix slowly. Add flour and baking soda to the dough gradually. Add almond slivers last. Using cookie scoop, place 1-inch balls on parchment lined baking sheet. Bake for 8-12 minutes.
Recipe Notes

I didn't have any pistachios on hand to add to the mix, hence the almonds.  Also, if you want a more vibrant green cookie, add a few drops of food color to the dough.
