They are my baking go to when I need a quick fix.
Simply because, they are simple.
And these pudding cookies are foolproof!
You can adapt them to make any flavor you desire.
The first time I made them was in a chocolate chip cookie recipe.
They turn out perfect:
I adapted the Chocolate Chip recipe for Pistachio since I had this Jell-O flavor on hand.
I didn’t have any ACTUAL pistachios on hand though, hence the almond slivers….
But if you do have pistachios, chop those babies up and throw them in the dough. I’m sure it’s delicious.
