No-Bake Gluten Free White Chocolate Cranberry Protein Cookies

So, we begin with the oats:

oats

Hello, old fashioned.

Hello, food processor.

Oats, meet processor.

(and your doom)

pulverized oats

A quick wiz around the food processor and pulverized the oats into “flour”

rice syrup

Rice Syrup.  This stuff is pretty amazing. Easy to bake with and low-glycemic.

I used sunflower seed butter for my recipe, you can use any nut butter you choose. (for some reason the sunflower butter looks slightly green in this picture, but not in person).

Added the protein powder, dough is getting a little stiff.

Instructions
  1. In a microwave, melt the nut butter with the rixce syrup (or honey) and mix thoroughly. (I set mine for 30 seconds and stirred). Add the dry ingredients and mix; it should be crumbly. Slowly mix in the milk. Stir in the white chocolate and craisins. Using a cookie scoop, roll small balls with hands and place on parchment paper. Chill for at least 30 minutes before serving.
